So, as many of you know, it is summer. Trust me when I say it is HOT outside and with a family that has a sensitivity to heat and the sun, it can be almost unbearable. It is this time a year where ice cube trays have to be filled constantly, creative ways to stay cool pop up all over the house, and the demand for a refreshing treat echos off the walls. Is Fall here yet? Hahaha

Since Fall is still a ways off and it is just too hot to go shopping, I had to get creative with a refreshing dessert that required no cooking (too hot for oven use). Scouring through my pantry, I searched for something..anything.. that would work to make a dessert. Remember the story of old Mother Hubbard that went to the cupboard? Yeah, my pantry was bare, except for a jar of flour, a bag of sugar, and a solitary can of crushed pineapple.

Out of those options, the only thing that could be eaten without preparation was the can of crushed pineapple. I may not be Princess Leia looking for Obi-Wan, but this can was my only hope. I tore it opened and dumped it in a blender to liquefy the already mushy pineapple remains. Once well blended, I dumped 1/3 cup of VAT milk and 2 Tablespoons of granulated Sugar. Once again I turned the blender to liquefy and watched the pineapple blend with the milk and turn into a light yellow soup. I then found my Popsicle molds and dumped the mixture into the molds, capped them and placed them in the freezer. After which, I crossed my fingers.

Four hours later I carefully removed a Popsicle. While members of my family watched, I took a taste. Slowly I savored the bite and stared at everyone. I wonder what the world record for a staring contest is because we could have probably beat it easily.

In my head I was trying to figure out how to break the news to them. I figured I should just say it as simple as possible, “I am so sorry guys, but you won’t like these. I guess I am just gonna have to eat them all.”

My plan didn’t work. Within seconds, my freezer was like my pantry, empty. The Refreshing Pineapple Popsicles were devoured almost in an instant. I guess I need more pineapple.

I have shared this refreshing recipe for the summer season. It is very simple to make and it can easily be converted to use fresh pineapple. YUM!

Refreshing Pineapple Popsicle

  • Servings: 8

Ingredients

  • 1 14 oz can of crushed pineapple (or 2 – 2.5 cups of chopped fresh pineapple)
  • 2 TB Sugar
  • 1/3 cup milk
  • Popsicle molds
Directions

  1. Dump the crushed pineapple in a blender and turn the blender to liquefy. Liquefy for 2 min.
  2. Add milk and sugar and liquefy for another 2 min
  3. Carefully pour pineapple mixture into popsicle molds and place in freezer for 4-6 hours
  4. To remove a popsicle from the mold, run hot water over the mold and gently pull the popsicle out
  5. Serve and Enjoy
