A Mexican Torta Recipe Inspired by Nickelodeon’s The Casagrandes

Family night just got tastier thanks to the Nickelodeon’s TV series The Casagrandes: The Complete First Season (affiliate link), which is now available on DVD. The Casagrandes is about a young girl named Ronnie moving to the big city and moving in with her big family. Her life is surrounded by love, family and of course food.

The following Mexican Torta recipe is inspired by Ronnie Anne’s abuela (grandma), Rosa. What is a torta? Basically a torta is a sandwich that consists of a fluffy bun, butter, and topped with anything you can imagine. In this case, the recipe is a chicken torta with an avocado spread. Yumm.

To make the Mexican Torta requires a few ingredients that my house doesn’t keep on hand. I mean, what is a torta roll? I am so hoping that these are labeled with big letters in the Mexican food isle. If not, I will find something fluffy in the shape of a roll. The other ingredients needed to make this delicious sandwich are:

  • 4 Chicken breast halves
  • 4 torta rolls, ciabatta rolls, or similar
  • 1/4 cup mayonnaise
  • 1/3 cup refried beans
  • 1/2 avocado, mashed with a fork
  • 2 mozzarella string cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 3-5 Tablespoons vegetable or canola oil 1 can pickled jalapenos

The hardest part of this recipe, other than finding a torta roll, will be the cooking of the chicken. This recipe requires the pounding of a chicken Brest until it is thin, then breading it, and cooking it on a skillet. Remember all cooking and dealing with sharp knives or other sharp objects should be done by an adult. Once the chicken has cooled, the kids in the house will love to assemble their own Casagrandes Mexican Torta sandwich masterpiece.
