Valentine’s Day Flower Power Veggie Skewers Inspired by Minnie from Mickey Mouse Clubhouse – Recipe

Valentine’s Day is full of friendship and love featuring flowers, chocolates, and handmade goodies. Combining this day with Disney, and we get the most iconic duo that is perfect to represent the season of romance, Mickey Mouse and Minnie Mouse. With their unconditional love, devotion, and care, they are who many Disney fans aspire to be.

Thanks to Disney Junior, fans can bring a little Disney into their Valentine’s Day. With just a few simple ingredients and some basic knife skills, these delicious Flower Power Veggie Skewers will be a big hit for all family members! Simply grab a cucumber, some sugar snap peas, cherry tomatoes, carrots, and a red bell pepper to start fashioning these flower inspired treats.

To start the journey, wash and peel the cucumber and the carrot. A clean veggie is a yummy veggie. Then take a sharp knife and make five-to-eight shallow V-shaped cuts into the veggies, lengthwise along the side. Make sure the V cuts are equal distance apart.

Once the Cuts are made, slice the cucumber and veggie 1/4 of an inch. These slices will form the flowers

Next cut the top and bottom of the red bell pepper. Remove the seeds and slice it down the side. It should open up like a scroll. Use a small cookie cutter to cut out the shape of a heart. I suggest a metal cookie cutter to make slicing easier. Metal heart shaped cookie cutters can be found on amazon.com (affiliate link).

Once all the veggies are prepped, it is time to assemble the skewers. Take one bamboo skewer and place the veggies on in this order: cherry tomato, cucumber, carrot, sugar snap peas, and red bell pepper. It should look like the picture below. Repeat this step until all eight skewers are completed.


Finally, create the dip by combining the cheese, lemon juice, olive oil, and Dijon mustard in a bowl and mix until smooth. This dip will have a nice tangy flavor to complement the sweet veggies.

Ingredients

  • 1 Large Carrot, peeled
  • 1 medium hot house or English cucumber
  • 1 Large red bell pepper, with flat sides
  • 8 cherry tomatoes
  • 8 sugar snap peas
  • 4 oz whipped cream cheese
  • 1/2 tbsp lemon juice
  • 1/2 tbsp olive oil
  • 1 tsp Dijon mustard
  • 8 Bamboo Skewers
  • Heart shape cookie cutter

Directions

  1. To make petals, make four or five shallow V-shaped cuts down the length of the carrot and cucumber, spaced evenly apart.
  2. Cut carrot and cucumber into 1/4-inch thick pieces. Alternatively, use a channel knife to make cuts down the length of the carrot and cucumber.
  3. Cut the top and bottom off the pepper and remove the membrane and seeds
  4. Using a heart-shaped cookie cutter, cut hearts out of the bell pepper
  5. place a cherry tomato, cucumber, carrot, sugar snap pea, and a bell peper heart onto a bamboo skewer
  6. In a small bowl, mix together the cheese, lemo juice, olive oil, and dijon mustard until smooth
  7. Serve cream cheese mixture as a dip for the skewers
  8. Makes 8 skewers
