I had just finished making my famous Pumpkin Cookies for all my friends and family and I look down to see I had a little less than half a cup of pumpkin puree left. It is a conundrum that happens every year when I am baking, I always have a small amount of left over Pumpkin Puree. I could never bring myself to throw it out because it is so darn delicious. So every year, I started finding random recipes that took a small amount of pumpkin puree and making them. It has since become something of a tradition in my family as everyone gets to try new pumpkin treats every year.

Of course with every new recipe, there is a chance of the, “I should never have tried that shock” baking it’s ugly face into existence. My family has been a victim to a few of the crazy pumpkin recipes out there. But for the most part, we have enjoyed the delicious taste of pumpkin especially in Pumpkin pancakes and pumpkin ice cream. This year we decided to try something even more different. I was told about a Pumpkin Smoothie (yeah, it scared us at first as well) that took very little time and included one of my favorite holiday spices, nutmeg. With the right amount of pumpkin puree needed and the nutmeg ready, I quickly made this rather easy concoction.

Let me just say, Delicious. Who knew that apple juice and pumpkin puree could blend so well? I didn’t. I did change a few things within the recipe. My family is allergic to soy so I used 1/2 cup of VAT milk instead. It makes it creamier. I also baked the pumpkin seeds and then chopped them. I find that pumpkin seeds taste so much better when they are cooked. but other than that I kept the rest the same. I am sure you can choose your own organic apple juice for the recipe, but since the recipe comes from the R.W. Knudsen Family®, they suggest their apple juice. Who can blame them.

Frosty Pumpkin Smoothie from R. W. Knudsen Family

Ingredients

  • 1 1/2 cups R.W. Knudsen Family® Organic Apple Juice
  • 1/3 cup pure canned pumpkin (I suggest Libby’s)
  • 1/2 cup milk or plain soy milk (I used VAT milk)
  • 1/4 cup honey
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 cup crushed ice
  • 2 tablespoons raw hulled pumpkin seeds, chopped (I baked mine)
  • 2 to 3 fresh apple wedges

Directions

  1. BLEND juice, pumpkin, milk, honey, cinnamon, nutmeg and crushed ice in blender until smooth.
  2. Pour into 2 to 3 glasses. Sprinkle a few pumpkin seeds on top of each if desired. Decorate rim of glass with apple wedge.
