Po’s Holiday Almond Cookies Recipe

One of my family’s traditions is to watch the Kung Fu Panda Holiday Special on Christmas Eve. It’ i’s a fun movie that reminds us what the holiday is really about: time shared with family and friends. The movie features Po as the Dragon Warrior. He is still adjusting to his role and unsure on where his priorities lie. While struggling with what is right and where he should be during the holidays, he attempts to throw the epic Winter Feast at the Jade Palace.

However the Winter Feast isn’t what Po hoped it would be. It was cold, boring, and lacked festive fun. In realization that what he truly missed was spending the holiday with his dad, he leaves the feast. This, of course, is dumbfounding to Master Shifu, but Po always does what he wants or needs to do. The rest of the feast members follow suit and join him and Mr. Ping (Po’s dad) at the noodle shop, where everyone enjoys the best holiday ever.

Po's Holiday Almond Cookies Recipe

Ingredients

  • 1 Cup Butter, softened
  • 3/4 Cup White Sugar
  • 1 Large Egg
  • 1 Tsp Almond Extract
  • 2 1/4 Cups All-Purpose Flour
  • 1 Tsp Baking Powder
  • 1/4 Tsp Salt
  • 40 Whole Blanched ALmonds
  • 1 Large egg yolk only
  • 4 TBSP Water
  • Powdered Sugar

Directions

  1. Heat Oven to 350
  2. Cream butter and sugar. Add egg and almond flavoring, beat until well mixed.
  3. Mix together the dry and add the mixture to the butter mixture slowly, until well mixed.
  4. Shape dough into 1 1/4- inch balls. Place 2 inches apart onto an ungreased cookie sheet.
  5. Flatten slightly and press almond into the center of each cookie
  6. Beat egg yolk with water, brush cokkies evenly with egg mixture.
  7. Bake for 11-15 minutes. Set aside and cool
  8. Sprinkle with powdered sugar and serve
