So, as many of you know, it is summer. Trust me when I say it is HOT outside and with a family that has a sensitivity to heat and the sun, it can be almost unbearable. It is this time a year where ice cube trays have to be filled constantly, creative ways to stay cool pop up all over the house, and the demand for a refreshing treat echos off the walls. Is Fall here yet? Hahaha

Since Fall is still a ways off and it is just too hot to go shopping, I had to get creative with a refreshing dessert that required no cooking (too hot for oven use). Scouring through my pantry, I searched for something..anything.. that would work to make a dessert. Remember the story of old Mother Hubbard that went to the cupboard? Yeah, my pantry was bare, except for a jar of flour, a bag of sugar, and a solitary can of crushed pineapple.

Out of those options, the only thing that could be eaten without preparation was the can of crushed pineapple. I may not be Princess Leia looking for Obi-Wan, but this can was my only hope. I tore it opened and dumped it in a blender to liquefy the already mushy pineapple remains. Once well blended, I dumped 1/3 cup of VAT milk and 2 Tablespoons of granulated Sugar. Once again I turned the blender to liquefy and watched the pineapple blend with the milk and turn into a light yellow soup. I then found my Popsicle molds and dumped the mixture into the molds, capped them and placed them in the freezer. After which, I crossed my fingers.

Four hours later I carefully removed a Popsicle. While members of my family watched, I took a taste. Slowly I savored the bite and stared at everyone. I wonder what the world record for a staring contest is because we could have probably beat it easily.

In my head I was trying to figure out how to break the news to them. I figured I should just say it as simple as possible, “I am so sorry guys, but you won’t like these. I guess I am just gonna have to eat them all.”

My plan didn’t work. Within seconds, my freezer was like my pantry, empty. The Refreshing Pineapple Popsicles were devoured almost in an instant. I guess I need more pineapple.



I have shared this refreshing recipe for the summer season. It is very simple to make and it can easily be converted to use fresh pineapple. YUM!

Refreshing Pineapple Popsicle

  • Servings: 8
  • Difficulty: Easy
  • Print


  • 1 14 oz can of crushed pineapple (or 2 – 2.5 cups of chopped fresh pineapple)
  • 2 TB Sugar
  • 1/3 cup milk
  • Popsicle molds

  1. Dump the crushed pineapple in a blender and turn the blender to liquefy. Liquefy for 2 min.
  2. Add milk and sugar and liquefy for another 2 min
  3. Carefully pour pineapple mixture into popsicle molds and place in freezer for 4-6 hours
  4. To remove a popsicle from the mold, run hot water over the mold and gently pull the popsicle out
  5. Serve and Enjoy

I was on a search for a great lemonade recipe when I cam across this beauty on the Disney Family website. The Strawberry Basil Mint Lemonade caught my eye because I have a ton of strawberries that I have harvested today. I mean I have bowls full. It feel like I am in some Strawberry Shortcake alternate dimension. haha! I have been coming up with ways to use them: jellies, pies, and even freeze them for frozen snacks. Now I can add Lemonade to the list and with the temps skyrocketing past the tolerable stage, a cooling drink is well at the top of my list.

The dog days of summer are here! What better way to cool off than with a tall glass of strawberry basil mint lemonade?! Now this is not your typical lemonade. This lemonade is tart and sweet with an minty zing you’ll love. The pureed strawberries bring all the flavors together to make this refreshing drink a summer favorite to enjoy at the beach or poolside. It’s a perfect drink for garden parties and a relaxing warm day on your front porch. Enjoy! Disney Family

Strawberry Basil Mint Lemonade

  • Servings: 6

  • 3 cups freshly squeezed lemon juice
  • 1 cup granulated sugar
  • 2 cups strawberries, hulled and cut in half
  • 6 basil leaves
  • 8 mint leaves
  • 6 cups cold water
  • straws

  1. Combine the lemon juice with the sugar and mix until the sugar has dissolved in a pitcher.
  2. Puree the strawberries, mint and basil in a blender until smooth, then add to the pitcher.
  3. Mix in the 6 cups of cold water and serve over ice
  4. To achieve look seen in photo, adhere 3D Mickey stickers to paper straws for a fun effect.

The Little Mermaid is one of the most celebrated animated films of all time from the story line, to the art, and to the wonderful music. I can undertsand why Lego would also celebrate The Little Mermaid with cute Minifigures.

Free Firenzar Coloring Page from Slug It Out

The Slugterra game Slug It Out has debuted a new slug that is a little hot called the Firenzar! With fins like a fish, this little guy looks as if he can swim through fire. He has adorable fire eyebrows that accent his red body and yellow markings. He may look cute, fut this little guy can spew fire around you causing damage over a short period of time…basically you are burning until the attack is finally over. Better get the marshmallows ready or have a Boon Doc on hand. Firenzar hasn’t appeared in the show yet, but that could change since it is a slug we can collect in the game.

For those who want this little guy in the game, play the slug seeker mode in Dojang Grotto and you will find it.

Thanks to and Kelloggs, we Finding Dory fans have a great recipe to make and celebrate the debut of Finding Dory in theaters. Thankfully the Finding Dory Rice Krispies Treats are quick to make, unlike the release of a sequel to Finding Nemo that took forever to come out. The recipe has very little cooking time and lots of enjoyment.



These Rice Krispies Treats are inspired by Dory with her blue and yellow details. To make the shape you will need to print and cut-out the Dory shapes. The PDF is found on

  • 3 tablespoons butter
  • 10 oz. marshmallows or 4 cups mini marshmallows
  • 6 cups Kellogg’s Rice Krispies cereal
  • 1 cup Kellogg’s Froot Loops cereal
  • Blue icing
  • Yellow icing
  • Black icing
  • White icing
  • Purple Fruitloops

  1. In a large saucepan melt butter over low heat.
  2. Add marshmallows and stir until completely melted. Remove from heat.
  3. Add Kellogg’s Rice Krispies cereal. Stir until well coated.
  4. Using buttered spatula or wax paper; evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Allow to cool.
  5. Print Dory template. Use a paring knife to carefully cut treats into Dory shape
  6. Ice top of treats with blue, black, and yellow icing, creating Dory’s details.
  7. Use a small dab of white icing to create Dory’s eye and top with a purple Froot Loop.
  8. Enjoy!

The Disney movie Lilo and Stitch features an abomination…well actually he is cute and fluffy. His name is Stitch and he was created by Jumba. Through an amazing escape, Stitch ends up on Earth where he is adopted by a little girl named Lilo. During his time with Lilo, Stitch learns what it is like to have a family and people who love you. He learns Ohana.

Stitch is a blue creature with 4 arms and two legs…or maybe it is just six legs. He has a big nose, long ears, and a very strong personality. Certainly one of the cutest aliens in the Disney world 😀
